Summer Brunch: Fresh Strawberry Lemonade Yogurt

Being pregnant with twins I had a few cravings, a few of which were milk, peas and strawberry lemonade! Although, cravings can sometimes can be inconvenient, I can't complain--these cravings are pretty healthy, lucky me!

I decided that I would get a little creative and try other uses for this spectacular food combination of lemons and strawberries, or any berry at that! Here's what I came up with, fresh strawberry lemonade yogurt, perfect for a mid afternoon treat or to serve for a brunch. The sweetness of fresh strawberries and the tartness of the lemons make for a perfect vanilla and strawberry lemonade yogurt! After experimenting with my recipe I came up with the perfect tangy combination to make any taste bud jump.

Here are a few kitchen tools that helped me out:

1. Mixing bowl

The best part of the simple recipe is that it is just that, simple--only three ingredients.

To save time, and the headache of finding out how to make homemade yogurt, I opted to start out with my favorite vanilla yogurt. You could also try plain yogurt, but I decided on vanilla so it wasn't too tart. If you decide to use plain yogurt, you may need to add a sweetener, depending on your individual taste preferences.

Strawberries
Next I used my fantastic Chef'n Veggie Chopper to chop the strawberries to my preferred consistency.  I love my chopper for the reason that I can choose the consistency of the fruit or veggie I am chopping. It's a hand chopper, but great for those little things. I use it all the time to chop onion and cilantro and have even used it to make refried beans!

Finally you will juice and zest your lemon. You'll want to zest before you juice. The amount of lemon will depend on how tart you want your yogurt to be.


Try out other berries and add a little granola if you're feeling adventurous! Enjoy!
