If you like chocolate or Oreos as much as I do, you'll be a huge
fan of these delicious cookies & cream chocolate cupcakes!
Recently, I was lucky enough to be given my grandmother-in law's Kitchen Aid mixer. Although I never got to taste her delicious desserts, I can only imagine the sweet treats she whipped up! I’ve only been told how wonderful her melt-in-your-mouth Christmas chocolates were. She still has the whole town talking about her treats to this day! So thank you Grandma Carlile for the wonderful mixer!
Although my mixer is a little dated,
it still works like a charm and it sure makes mixing ten times easier, not to
mention it's much FASTER! This mixer is what prompted me to bake these
easy-to-make, little bites of heaven.
Ingredients:
1 box chocolate cake mix
1/2 package Oreo cookies
8 ounces cream cheese at room temperature
1/2 cup of butter at room temperature
1 pound of powdered sugar
1 teaspoon vanilla
24 decorative cupcake liners
1 cup cake pan
Recipe:
First, preheat your oven to 350 degrees. Next, mix packaged cake batter
according to directions on the box. Chop 1/4 package of Oreo cookies into
small pieces and add to the cake batter. Line cupcake pan with liners and fill
just under 3/4 of the way full. Check the cake mix box for bake time.
For the frosting you'll need to cream the cream cheese and butter together. Add vanilla and powdered sugar until mixed well. Chop the remaining 1/4 package of Oreo cookies into very fine pieces and add to frosting.
After your cupcakes have cooled frost and garnish with crumbled Oreos.
Delish!
