The Ultimate Comfort Food: Homemade Baked Macaroni and Cheese

So fall is almost officially here which ushers in a plethora of comfort foods. One of my go-to easy comfort meals is my mom's homemade baked macaroni and cheese. This yummy dish is baked in casserole dish and topped with bacon, and who doesn't like bacon!? With only 5 ingredients, this dish is a breeze to make.

The great part about my mom's macaroni and cheese is it makes for great leftovers. Kicker-- the picture below is actually my leftovers!

                          Ultimate Comfort Food: Homemade Baked Mac & Cheese!

Baked Macaroni and Cheese

4 cups uncooked macaroni
1/2 large onion minced
5 large eggs
5 cups medium cheddar cheese grated 
8 strips of thick cut bacon

Cook macaroni according to instructions. While macaroni is cooking, mince half an onion and grate cheese. Cook bacon to almost done, saving the bacon grease. Once macaroni is al dente, drain and pour into a 9 x 13 casserole dish. Crack all eggs over cooked macaroni and scramble throughout. Add salt and pepper, minced onion, 4 cups of cheese and bacon grease. Stir. Top with remaining cup of cheese and  strips of bacon. Cover with foil and bake at 375 for 20-30 minutes until egg is cooked and cheese is melted. Enjoy!
